Strawberry Margarita Jam

Written by Scott

We are declaring August to be the month of jam here in Grande Prairie. Vintage staffer & and culinary crackpot Shari presents her latest masterpiece: Strawberry Margarita Jam.

Strawberry Margarita Jam

4 cups strawberries (fresh or frozen), crushed with a potato masher or something similar

1/3 cup fresh lime juice

2/3 cup tequila (I used Cazadores)

¼ cup orange liqueur (I used Patron Citronage)

8 cups white sugar

2 57 gram boxes of pectin

Zest of three limes (approximately 2 tbsp of zest)

Combine strawberries, lime juice, tequila, orange liqueur and pectin. Stir until pectin is dissolved.  Bring to a boil over medium high heat, stirring often.  Once boiling, add sugar and stir until mixture reaches a rapid boil.  Boil for 1 minute.  Remove from heat and skim foam from top of mixture.  Stir in lime zest.

Add hot jam to hot, sterilized jars.  Top with sterilized lids and process in a hot water canner for 7 minutes, if using 125 ml jars, or 10 minutes, if using 250 ml jars.

Remove from canner and set aside until completely cool.

Yields 7 125 ml jars and 6 250 ml jars per recipe.  At least that’s what I got out of it!
